Coupe Pidy Gourmet Chocolate Wafer (Gaufrette) with melon foam and meringue

Ingredients: 
  • 10 Pidy Gourmet Chocolate Wafer Biscuits (Gaufrettes)
  • 10 Pidy Gourmet Amusettes
  • 1 cavaillon-melon
  • 50 gr sugar
  • 50 gr egg-white
  • 250 gr cream
  • 40 gr dessert gelatine
  • 1 bundle mint
  • 1/2 lemon
  • 100 gr sugar
  • 1/4 l water
Preparation: 
  • Make a mousse with 250 gr puree of cavaillon-melon, the half-whipped cream and the dessert gelatine
  • Spoon or pipe it into the Pidy Gourmet Wafers (Gaufrettes) until 4/5 full
  • Let them stiffen in the fridge
  • Meanwhile make a meringue with 100 gr egg-white and 100 gr sugar
  • Pipe the filled Gaufrettes into a ball-shape
  • Rub off with palette and heat on gas ring
  • Serve with a light mint sauce and melon balls in a Pidy Gourmet Amusette spoon
