Pidy Gourmet Mini Savarin with African flavours

Ingredients: 
  • Pidy Gourmet Mini Savarin
  • chocolate mousse
  • 1 l water
  • 500 gr sugar
  • 3 tablespoons ginger
  • 250 gr kumquats
  • English sauce
  • red fruits
Preparation: 
  • Add 2 tablespoons of finely chopped preserved ginger to the chocolate mousse
  • Bring 1 l water to the boil, with 500 gr sugar and 1 tablespoon ginger
  • Place Pidy Gourmet Mini Savarins in the syrup and keep it at a temperature of +/- 80 °C
  • When they are sufficiently soaked, place on a grill and allow to drain
  • Take a 1/5 l sugar syrup and preserve 250 gr kumquats which have been cut in half
  • Fill the bottom of a small glass with a layer of English sauce or make some pannacotta preserve
  • After setting, fill with some red fruits and red coulis up to 1/5 of the edge
  • Place a Pidy Gourmet Mini Savarin on top and set in the fridge
  • Decorate as desired
