Pidy Gourmet Tarte Sablée with lemon and rhubarb

Ingredients: 
  • 3 Pidy Gourmet Tartes Sablées 18 cm
  • 500 gr rhubarb
  • 1 lemon
  • 150 gr sugar
  • custard
  • 200 gr lemon jam
  • 100 gr almonds
  • 100 gr sugar
  • 1 egg-white
Preparation: 
  • Make a classic custard and add some zest of lemon
  • Mix 500 gr young red rhubarb, juice of 1/2 lemon and 150 gr sugar, and stew slightly, then let it completely cool off
  • Rub the bottom of the Pidy Gourmet Tartes Sablées with 1/2 lemon
  • Scoop 3 tablespoons lemon jam on the bottom
  • Pour the custard as thinly as possible on the bottom
  • Spread the rhubarb over the custard smoothly
  • Mix 100 gr almonds with 100 gr sugar and some egg-white to make it creamy
  • Spread over the tart and bake in a hot oven at 180 °C until the top layer becomes lightly browned
