Sweet puff-pastry Pidy Gourmet Tartlet with 2 chocolate mousses

  • 20 Pidy Gourmet Tartlets (Tartelettes Feuilletées Sucrées)

For the chocolate mousse fondant:

  • 250 gr chocolate fondant
  • 200 gr half-whipped cream
  • 200 gr egg-white
  • 200 gr sugar

For the white chocolate mousse:

  • 100 gr milk
  • 25 gr sugar
  • 2 egg-yolks
  • 2,5 gelatine sheets
  • 220 gr white chocolate
  • 400 gr half-whipped cream
  • fresh fruit to garnish
  • some advocat
  • Make a chocolate mousse with the chocolate fondant, half-whipped cream, egg-white and sugar
  • Make a chocolate mousse with the white chocolate, milk, sugar, egg-yolks, gelatine sheets and half-whipped cream
  • Using a brush, spread the inside of the Pidy Gourmet Tartlets with dark chocolate
  • Fill the left half of 10 Pidy Gourmet Tartlets up with fondant mousse and the right half with white chocolate mousse
  • Let them stiffen in the fridge
  • Lay the filled Pidy Gourmet Tartlets on the plate and cover each one with an upside-down Pidy Gourmet Tartlet
  • Garnish with fresh fruit, a thin slice of advocat and some chocolate
