Pidy Gourmet Bouchée Carrée with fried strips of sole and a fragrant tzatziki dressing

Ingredients: 
  • 4 Pidy Gourmet Bouchée Carées
  • 2 soles (size 3/1)
  • breadcrumbs
  • egg white
  • 2 dl Greek yoghurt
  • mint
  • garlic
  • 8 spring onions
Preparation: 
  • Fillet the sole
  • Cut into diagonal strips
  • Coat in egg white and fine breadcrumbs
  • Bake the Pidy Gourmet Bouchée Carrée for 6 minutes at 170 °C

Make the zatziki with the following ingredients:

  • 2 dl Greek yoghurt
  • 2 tbs finely chopped mint
  • 3 cloves garlic, crushed
  • 4 very finely sliced spring onions seasoned with salt and pepper

Put 2 tablespoons of zatziki in the Pidy Gourmet Bouchée Carrée. Put the fried strips of sole in the zatziki. Decorate the plate with a red pepper coulis, a braised spring onion and the rest of the zatziki.
