Pidy Gourmet Quattro with scampi and lassi with curry, lemongrass and ginger

Ingredients: 
  • 4 Pidy Gourmet Quattros
  • 16 cooked scampi (16/20)
  • 250 g low-fat yoghurt
  • yellow curry paste
  • ginger
  • lemongrass
  • coriander
  • 2 shallots
  • 1 carrot
  • salt and pepper
  • 1/3 glass white wine
Preparation: 
  • Put the Pidy Gourmet Quattros in a pre-heated oven (170 °C) for 5 minutes
  • Peel the scampi
  • Lassi: pour the yoghurt in a blender
  • Then add: 1/2 tablespoon curry paste, grated ginger and finely chopped lemongrass
  • Season to taste with salt and pepper
  • Gently fry the finely chopped shallots and carrot in some corn oil
  • Add a pinch of curry paste and chopped coriander
  • Pour over the white wine and allow to cool
  • Arrange the cooked vegetables and herb mix in the Pidy Gourmet Quattros
  • Place the peeled scampi on top
  • Finish with a few drops of lassi
