Quiche with roasted vegetables, feta, parmesan and pine nuts

Ingredients: 
  • 1 x 18 cm Pidy Gourmet Quiche
  • 1 courgette, sliced
  • 1 aubergine, sliced
  • 2 shallots cut in rings
  • 50 g pine nuts
  • 1 tbs rosemary, chopped
  • 3 eggs
  • 1/4 l whipping cream
  • 1 tbs pesto
  • 200 g feta cubes
  • 100 g grated parmesan
  • salt and freshly milled pepper
Preparation: 
  • Fry the slices of courgette and aubergine in a non-stick pan with a little olive oil, salt and pepper
  • Do the same with the shallots
  • Roast the pine nuts
  • Loosely beat the eggs with the cream and add the pesto and salt and pepper to taste
  • Add the roasted courgettes, aubergines, shallots and feta cubes to the Pidy Gourmet Quiche
  • Sprinkle with the parmesan and bake in the oven at 185 °C for half an hour
